New Years Resolution Cookery Challenge

Only a small challenge, more for motivation purposes than anything - I have accepted the challenge to cook a different meal every Monday night for 6 months. Whilst it doesn’t seem like much of a challenge, the information which is missing here is that my partner is a veggie.
What with the pace of life and all that, we have been very busy of late and so have been drawn increasingly to cooking quick meals. As we do not do microwave cooking (didn’t even have one until the January sales when I bought a combi oven half price!) that means there have been a lot of stir fried veg with pasta/rice/noodles/jacket spuds.
It was all getting very samey. This post is really for me to keep a track of what I have been doing.
The first meal was a nice chunky vegetable curry.
The second meal was tagliatelli with courgettes, mushrooms and chopped walnuts in sour cream.
The third meal, last night, was cauliflower cheese and veggie Lincolnshire sausages.
Not been pressed to get creative yet. The main idea is just to get a little bit more variety in our meals and to push myself to do something different rather than just cooking the same old thing, just because it’s easier than thinking.
Mmmmm, you’re making me hungry lol.

Its all to easy to get stuck in a rut food wise, I’ve got about 5 cookery books at home and they hardly ever get a dust off so we can try something a bit different.
Sounds like a great idea, I think decent veggie cooking is quite a challenge. However, I think by using the right blend of herbs and spices… it’s possible to create a tasty dish, even without meat.
