Meal No 8 - Leek, Mushroom & Lemon Risotto

This dish actually takes a while to make, not that it’s difficult, it just needs fairly constant attention.
Cookbooks and the internet are full of this type of recipe so I don’t feel the need to repeat it here.
If you have used a real lemon for the juice and the zest, and fresh parmaggio both in the risotto and sprinkled on top to serve, it’s a rich dish with strong clear tastes - certainly more than just a bowl of rice!
