Meal No 9 - Aubergine and Parsnip Biryani

This has to be the most time intensive meal I’ve prepared so far. I can see why there is such a big market in curry sauces.
In total I would estimate this took about two and a half hours from when I started to when I sat down to eat.
As this was the Monday before last, I cannot remember enough to go into detail in this post save to say it was very tasty.
Not being in the country is my excuse for not cooking this Monday gone, and I am away this coming Monday too. More cooking posts to follow.
